Chicken Noodle Casserole

Ingredients

2 C carrots, chopped
2 C celery, chopped
1 small onion, chopped
1.5 tsp extra virgin olive oil
1.5 pounds boneless skinless chicken breast, diced
2 C chicken broth
4 C whole wheat pasta(I used medium shells)
1 tsp dried thyme
1/2 tsp poultry seasoning
4 oz reduced fat cheddar cheese, shredded
Directions
Preheat oven to 350. Saute carrots, celery and onion in olive oil. Cook for 5 - 10 minutes, until just softened. Add chicken, cook for two minutes then add 1 cup of broth, simmer for 8 minutes. Remove from heat to cool while you cook pasta. Only partially cook the pasta as it will finish in the oven. Stir cheese into chicken, add pasta and remaining 1 cup of broth. Pour into a sprayed 13x9 dish. Bake for 30 minutes. Makes 8 servings.
