Banana Flax Pancake (Gluten-Free, Grain-Free, high protein, low carb)


My original recipe uses an apple as the base fruit. This one uses a half of a mashed banana! Yum!! My original recipe uses an apple as the base fruit. This one uses a half of a mashed banana! Yum!!
Number of Servings: 1


    2 egg whites
    1 tbsp plain yogurt or coconut milk
    4-5 drops vanilla stevia
    1/2 banana, mashed
    2 tbsp flax meal
    sprinkle of cinnamon & nutmeg


Whisk together eggs, yogurt, and stevia until fluffyish. Whisk in banana and spices. Let sit for 2-3 minutes while you preheat an omelette pan with nonstick spray or some coconut oil.

Cook about 2 - 3 minutes on first side, then flip and cook 2-3 mins on the second side.

Makes 1 large pancake. Serve with plain yogurt or peanut butter for the perfect flavor combos!

  • It didn't look like the photo- it was darker. Also, I had a hard time getting them (I made 2 smaller pancakes) getting them cooked all the way through for some reason. Anyway, I liked them, they were like regular banana pancakes and I liked the texture of the flax in them. - 3/6/14

  • Doesn't remind me of a traditional pancake but good anyway! Very filling. I found it easier top top with additions (blue berries, chocolate chips etc) than to add them to the pancake. They are VERY banana-y, so don't be surprised! I am going to try the apple as a base too with some cinnamon. - 2/13/14

  • no need for stevia or yogurt! You can even add a little cardomon and/or coconut milk and they are great that way and paleo. - 4/13/13

  • Surprisingly good - I added 1 scoop of chocolate protein powder, 1 T flax and topped w/ 1 T of peanut butter which brought the total calories to 318 - wanted to make sure I would be satisfied until lunchtime. Made 1 good sized pancake. - 5/9/11

  • Just made these this morning. Loved them. Loved the nutty flavor. I added 3 tbsp. of flax to them as it seems to have been forgotten in the recipe above. My husband hates flax, but loved the pancake. Filling too. - 12/18/10
