Baked Gingerbread oatmeal

Introduction

This baked oatmeal is a great holiday breakfast treat. This baked oatmeal is a great holiday breakfast treat.
Number of Servings: 8

Ingredients

    2 eggs
    1 cup milk
    1/2 cup apple sauce
    1/4 cup molasses
    2 teaspoons baking powder
    1/2 teaspoon cinnamon
    1 teaspoon ginger
    3 cups oatmeal (not instant)

Directions

Combine above ingredients, mixing well. Pour into greased pan.
Bake at 350 degrees for 30 minutes.

Makes 8 servings

    What a terrific idea! I gave it a 4 as is because I found it a little bland, but the second time I made it I added more cinnamon and some nutmeg, allspice, cloves and cardamom, which gave it some zip. And I also tried it with just a little cinnamon, 1T vanilla and 1/2 cup chopped dried cherries. Yum - 1/17/11

  • Made this with the extra spices plus vanilla and still found it to be bland. Will try it again using nuts and raisins to see if that adds flavor. - 3/24/13

  • I made this for breakfast this morning and have been satisfied all morning without cravings. Yes, it can use more spice and if not restricting sodium, add a little salt. My husband said, "not my favorite but I'll eat it if you feed it to me. ' Going to try freezing some for other days. - 3/15/13
