Sweet Potato, Squash and Ginger Soup

Introduction

Yummy on a cold day, I personally add some hot sauce to kick it up but I leave it out for the kids. Yummy on a cold day, I personally add some hot sauce to kick it up but I leave it out for the kids.
Number of Servings: 6

Ingredients

    1 large sweet potato
    1 small butternut squash (about 3 cups diced)
    2 carrots
    1 inch piece of fresh ginger root peeled and grated
    2 vegetable boullion cubs
    6 cups water
    1 large onion
    hot pepper to taste (not included in calories)

Directions

Throw everything into a pot and boil until it is all squishy and then take a hand blender and puree or put in a regular blender and puree. Serves 6.

Tip: If you buy the butternut squash whole instead of cubed then cut it in half and bake at 350 with the seeds out for about an hour or until squishy to put in the soup because that is much easier than peeling it!!
