50 grams whole wheat pastry flour
1 serving (16 grams) Jarrow vanilla brown rice protein
3/4 c. (90 grams) canned pumpkin puree
1/2 tsp. baking soda
cinnamon, nutmeg to taste
stevia to taste (I used the equivalent of a bit over a TBS of sugar sweetness)
Enough water to make the batter the proper consistency
Set batter aside to rest while your skillet heats up - gives the gluten time to relax and makes for fluffier pancakes.
Bake on a griddle.
Makes one large serving.
