Introduction

This recipe is adapted from Healthy Cooking magazine. These are really delicious!! The original recipe had dates and walnuts, I didn't have any so omitted them. Number of Servings: 12

Ingredients

    1 cup mashed bananas (about 2 medium)
    3/4 cup sugar
    1/3 cup unsweetened apple sauce
    3 tbsp canola oil
    1 egg
    3/4 cup all purpose flour
    3/4 cup whole wheat flour
    1/2 cup quick cooking oats
    1 1/2 tsp baking powder
    1/2 tsp baking soda

Directions

In a large bowl beat bananas, sugar, applesauce, oil and egg until well blended. Combine the flours, oats, baking powder, baking soda; gradually beat into banana mixture. Put into muffin tins (makes 12 large muffins or 48 mini-muffins).
Bake at 350 for about 15 minutes (if making larger muffins it takes about 23 - 25 minutes.)
