Ingredients

3 tbsp olive oil
2 tbsp chili powder
1 lb cubed boneless pork chops

1 med onion diced,
1 small pasilla pepper cleaned and chopped
finely
1 1/2 red pepper diced,
1 green bell pepper diced
8 roma tomatoes diced
2 cloves garlic finely chopped
1 tbsp fresh oregano finely chopped

1 24 oz can white hominy with packing liquid
1 12 oz can black olives with packing liquid
1/2 tsp salt
Directions
Makes 10 1 cup servings
in large stock pot heat 3 tbsp olive oil and toast chili powder until aroma is released
add diced pork and brown until meat is coated with toasted chili powder
add red and green bell peppers, onions, pasilla peppers, roma tomatoes garlic and chopped oregano. sautee until onions become a little translucent. add hominy and packing liquid
add olive packing liquid and slice olives, adding to soup. cover and simmer for 15 minutes
