Low-fat Oatmeal Raisin Cookies

Ingredients

Whole Wheat Flour, 1 cup
Baking Powder, 1 tsp
Cinnamon, ground, 1 tsp
Baking Soda, 1/2 tsp
Salt, 1/2 tsp
Brown Sugar, 1/2 cup, packed
Splenda, 1/2 cup
Yogurt, Plain Nonfat-Great Value, 1/4 cup
Canola Oil, 2 tbsp
Egg, fresh, 1 large
Vanilla Extract, 1 1/2 tsp
Oats, 1 1/3 cups
Raisins, 1/2 cup, packed
Directions
1)Preheat over to 350 degrees and spray 2 cookie sheets with cooking spray. (I use olive oil.)
2)Combine flour, baking powder, cinnamon, baking soda and salt together in a small bowl.
3)Combine brown sugar, Splenda, yogurt, oil, egg and vanilla in a large bowl.
4)Add flour mixture to make blended dough.
5)Stir in oats and raisins.
6)Drop mixture with cookie scoop 2 inches apart on prepared cookie sheets.
7)Bake 8 minutes until just lightly browned. Take fork and press down to flatten cookie. (They don't flatten on own while baking.)
8)Remove from cookie sheets and let cool on rack.
Makes 24 cookies.
