Cheesy Smashed Potatoes (w/ Cauliflower)Submitted by: SMLJRL
1 lb. potatoes (about 3-4 medium) cut into chunks
1 cup bite-sized cauliflower florets
1/4 cup fat-free sour cream
1 cup reduced fat cheddar cheese
Bring to boil on high heat. Reduce heat to medium; simmer 20 min or until vegetables are tender. Drain; return to pan.
Add sour cream; mash until vegetables are light and fluffy. Stir in cheese.
Makes 6 servies, 1/2 cup each.
