Quinoa and Red Lentil Cutlets

Ingredients

    1/2 cup Quinoa
    3/4 cup red lentils
    1/2 medium onion minced
    3 cloves garlic minced
    1/2 tsp rosemary
    1/4 tsp black pepper
    1/2 tsp sage
    1 1/2 tsp thyme
    1 Tbls nutritional yeast
    1/2 tsp celery salt
    1 tsp salt
    1 tsp smoked paprika
    3/4 cup vital wheat gluten

Directions

Rinse quinoa in several changes of water. Cook lentils and quinoa in 4 cups water for 20 minutes. Let cool. Preheat oven to 350. Mix drained quinoa/lentil mixture with all ingredients except gluten. Mix in the gluten and knead for 5 minutes. Divide evenly in 8 pieces and flatten to 1/2 - 3/4 in. thick rectangles. Bake 20 minutes, turn and bake another 10-15 minutes. Serve hot with gravy or use as sandwich filling. Makes 8 cutlets.
