Mix ingredients until flour is completely wet. Place in large plastic bin & cover loosely. Allow to rise (2hrs). Loosely cover & refrigerate for 1-14 days. When you want fresh baked bread or rolls. Coat(with flour) a softball-sized piece of dough & roll to desired shape. Let rest 30min. Preheat oven to 450' with broiler pan on top shelf. Just before baking, place 1 cup tap water in broiler pan (for steam). Bake for 30 min on baking stone or parchment lined pan. Optional: you may paint with eggwash or water just before baking to get a different crust. Also, if you slash the top a few times, you will get a better rise in the oven
