Sick Puppy Cream of Broccoli Soup

Introduction

Super sick ... and I wanted a healthy recipe so quick and easy someone as tired and headachey as me could make it. Super sick ... and I wanted a healthy recipe so quick and easy someone as tired and headachey as me could make it.
Number of Servings: 2

Ingredients

    3 cups frozen broccoli
    1 reduced-sodium bouillon cube (any flavor, I used chicken)
    4 oz almond milk
    3 oz Fage 0% fat greek yogurt
    Salt and pepper to taste

Directions

Place 3 c broccoli in a small saucepan, add just enough water to cover and drop in a bouillon cube. Bring to boil, cook until broccoli is tender (I used pre-cooked frozen broccoli, so it took just a couple of minutes).

CAREFULLY transfer the contents of the saucepan to a blender (alternative: use a stainless-steel--but not plastic!--immersion blender), blend for 30 seconds to 1 minute until broccoli is all blended up. Mixture should be fairly thick.

Transfer the contents of the blender back to the saucepan, over medium heat. Stir in almond milk and greek yogurt and stir until warm/hot. Add salt and pepper to taste.

Now go back to bed and eat your soup!
