Low-Carb Taco Bake

Ingredients

    1lb Ground Turkey, browned & drained
    1 tsp Taco Seasoning
    1/2 cup Bell Peppers, chopped
    4 ea Black Olives, sliced or chopped
    1 cup Spinach, shredded
    1/2 cup Mushrooms, diced
    2 servings Grandpa's Hot Sauce (in my recipe box)
    1/2 cup Cheddar Cheese, shredded
    1/2 cup Mozzarella Cheese, shredded
    1/2 cup Red Cabbage, shredded
    1/2 cup Napa Cabbage, shredded
    4 tbsp Sour Cream

Directions

1. Preheat oven to 350F.
2. Combine taco seasoning with ground turkey according to package directions.
3. Layer Taco meat and next 4 ingredients in a sprayed casserole dish. Top wth Hot Sauce and cheeses.
4. Cover with foil and bake 20 minutes. Uncover and bake an additional 5 minutes if you want the cheese to start to brown.
5. Serve over shredded cabbage and top with Sour Cream.

**Can also add diced scallions, more cheese, more hot sauce, etc to the top.
**Can also be served in a low-carb tortilla.
