Sweet Potato Custard

Introduction

This is the best substitute for pumpkin pie. This is the best substitute for pumpkin pie.
Number of Servings: 8

Ingredients

    1 can evaporated milk, (13 oz)
    1/2 Tbsp ground ginger
    2 Eggs
    12 tsp Splenda Brown Sugar Blend
    2 cups sweet potato, canned, drained, rinsed

Tips

Add a tsp a cinnamon and turn this into a dessert, you will be able to surprise anyone. This dish can be served warm or cold just like pumpkin pie.


Directions

Preheat oven to 350 degrees.
Mix all ingredients and cook in water bath 45-60 minutes or until knife comes out clean.

I put a 6x9 pan inside a 9x13 pan, then fill 9x13 pan half way with water.
