Introduction

I remember this recipie from my childhood. My mother used to make this dish only on sundays. I remembered her making it on a random weekday and thinking it was the worst chicken ever. Ah the magic of sundays.
This is a very simple dish, I used a lot of brown rice but only about 1 cup is really needed.

This is a very simple dish, I used a lot of brown rice but only about 1 cup is really needed.

Number of Servings: 7

Ingredients

    1 package boneless chicken breast
    5 slices reduced fat bacon (not turkey bacon, you need the fat)
    2 Cups Brown rice
    1 can of Cream of chicken soup

Directions

Preheat the oven to 325.
In a medium sized glass baking dish line the bottom with bacon slices.
cover the bacon with the brown rice
lay chicken on top of the rice
in a separate dish mix cream of chicken with about 1 cup of water.
spread liquid evenly over chicken and rice.
Cover with tinfoil and place into oven.
Cook for 21/2 to 3 hours. Don't open the foil a lot, the steam is what helps the rice to cook.
