2 carrots peeled and diced
1 vidalia onion peeled and diced
1 lg. potato peeled and diced
1 parsnips peeled and diced
1 celery stalk diced
1 cup celery root (celeriac)
1 cup chopped cabbage
3 garlic cloves sliced
1 cup diced tomato es
1 tsp oregano
1 tsp tarragon
1 tsp paprika
1 tsp ancho chile powder ( or pieces of a Jalopeno)
2 parslay sprigs
1 pac. of no salt chicken broth
(want vegetarian use veggie broth)
2 cups of water.
add all ingredienses and cook until soft. salt and pepper to tase.
remove from stove and let cool a little.
Remove parsley sprigs,and pour the rest into a blender and
puree until smooth.
serve with fresh parsley or fresh basil.
