Red Bean Croquettes w/ Avocado Yogurt Sauce

Ingredients

Croquettes:
Beans, red kidney, 2 cup
Egg, lightly beaten, 1 medium
Onions, raw, .25 cup, minced
Parsley, .25 cup , minced
*Barbecue Sauce, 1-2 Tbsp
Yellow Mustard, 1 tsp
Yellow Cornmeal, .75 cup
Olive Oil, 2 tbsp
Salt, 1 dash
Pepper, black, 1 dash
Yogurt Sauce:
Yogurt, plain, whole milk, 1 cup
Garlic, 2 cloves minced
Avocados, 1 whole
Lemon Juice from 1/2 a lemon
Directions
Mash the beans (or run through food processor). I prefer to leave it somewhat chunky.
Mix in egg, onion, parsley, bbq sauce, & mustard. Add a dash of salt & pepper to taste.
Add cornmeal 1 Tbsp at a time until mixture is just stiff enough to work with.
Form into small 2-3" patties, rolling each in the remaining cornmeal to coat.
Heat 2 Tbsp Olive Oil in large skillet. Place patties in hot oil and cook approx. 4 minutes on each side until brown and crispy.
For the Yogurt Avocado sauce, mash the avocado, then mix in with garlic & yogurt. Add salt to taste if desired (not included in nutritional info).
