Creole Sauce (for Chicken or Shrimp)

Introduction

Ingredients

    1/2 cup diced raw onion
    1 medium celery stalk, diced
    1/2 of a medium Green Bell Pepper, chopped
    1/2 tsp garlic puree
    1/2 can of Del Monte Italian Recipe Stewed Tomatoes
    1/4 cup low sodium chicken broth or stock
    1/2 TBSP Dried Parsley
    1/2 tsp Dried Thyme
    1/8 tsp cayenne pepper (or cajun seasoning)
    2 tsp Worcestershire sauce

Directions

In skillet sprayed with nonstick spray, add onions, green pepper, and celery and saute until tender - about 3-4 minutes.
Stir in the tomatoes, chicken broth, parsley, thyme, worcestershire sauce, and cayenne pepper.
Reduced heat and simmer, uncovered, about 15 minutes or until the sauce is reduced by about half.
Serve over chicken, shrimp, or rice.
