Italian Sausage & Pepper Pasta

Ingredients

    1/2 pound raw turkey sausage, removed from casing
    2 tsp olive oil
    2 medium yellow bell peppers, cut into strips
    1 medium onion, sliced
    1/2 cup red wine
    1 1/2 Tbsp minced garlic
    1/2 tsp fennel seed, chopped slightly
    28 oz fire roasted tomatoes, diced
    1/4 tsp red pepper flakes
    1/2 tsp salt (or 1 tsp to taste)
    8 oz barilla whole grain rotini
    1/3 cup fresh basil, chopped

Directions

Makes 6 servings, 1 1/3 cups each
Bring pot of water to a boil.
In a large nonstick skillet cook sausage until brown and cooked through, breaking up with a wooden spoon. Remove from pan. Add 2 tsp oil and sliced peppers and onions. Cook until crisp-tender, then add garlic and 1/2 tsp choppedd fennel seed if desired. Cook a minute, then add wine and red pepper and salt. Cook until wine has nearly evaporated. Stir in tomatoes and sausage. Bring to a boil and then reduce heat and cover; cook until vegetables are tender about 10 minutes. If very soupy, you may want to boil without the lid at this point to evaporate some of the liquid and thicken the sauce slightly. Meanwhile, add pasta to boiling water and cook until done to taste. Drain. Add to large bowl, then add sauce. Stir lightly, then stir in basil.
