Bourbon Chicken with brown rice

Ingredients

    1 lb raw chicken, cut into bite-size pieces
    1 lb frozen broccoli, steamed
    1 lb raw baby carrots, sliced in half
    1.5 c dry brown rice, prepared according to package directions with water, no salt, no butter
    1 T olive oil
    3 cloves garlic, minced
    3/4 tsp crushed red pepper flakes
    1/3 c light brown sugar
    2 T ketchup
    1 T cider vinegar
    1/2 c water
    1/3 c lite soy sauce
    1/4 c apple cider

Directions

Prepare brown rice according to package directions.

In a large skillet or dutch oven brown chicken pieces in olive oil over medium high heat.

In the skillet or pot, remove chicken. Reduce heat to medium. Add garlic, pepper flakes, sugar, ketchup, vinegar, water, soy sauce, and cider. Mix well until dissolved. Add chicken and bring to a full boil. Reduce heat further to medium-low to low and simmer for 20 minutes.

Steam broccoli and carrots in the microwave or cook any other way you like them. You can do this by putting them in a microwave-safe bowl, adding 2 to 3 T of water, cover tightly, and microwave for around 3 to 5 minutes.

Add veggies and mix well. Serve over rice.
