Pineapple Rice without Meat

Introduction

Very simple to make. I microwaved brown "minute" rice but any brown rice will do. The key is to cook it with the whole cloves so the flavors blend. Very simple to make. I microwaved brown "minute" rice but any brown rice will do. The key is to cook it with the whole cloves so the flavors blend.
Number of Servings: 2

Ingredients

    1 c. brown "minute" rice
    2 c. water
    2 whole cloves
    1/2 can (4 oz) no-sugar-added pineapple chunks, drained

Directions

Cook rice according to package instructions, adding 2 whole cloves to the water when you add the rice.

When rice is done, put it in a no-stick skillet with the pineapple chunks.

Stir constantly, cooking over a low heat until pineapple is tender and heated to your taste, about 3 minutes.

Remove cloves before serving.

Serves 2.
