Fruit Salad with Mint

Introduction

A deliciously different fruit salad with the taste of mint. You can use any combination of 6 to 7 cups of any fresh, frozen or canned fruit you wish. Ingredients

    1 cup water
    1/3 cup white sugar
    1 Tablespoon lemon juice
    1 Tablespoon dried mint leaves
    2 large peaches, diced
    2 kiwi fruit, peeled and diced
    2 medium Granny Smith apples, cored and diced
    1 cup canned pineapple tidbits, drained
    1 Tablespoon fresh mint leaves, chopped (if desired)


Directions

1. Combine the water, sugar, lemon juice, and dried mint in a small saucepan. Bring just to a boil over high heat. Take pan off of the heat and let steep for 10 minutes. Strain the mixture through a fine meshed strainer and discard the dried mint. Let the syrup cool.

2. Combine the fruit in a large bowl. Once the syrup is cooled, pour it over the fruit and stir gently. Keep chilled until ready to serve. Stir in fresh mint when ready to serve, if desired.

Makes 6 servings.
