Basic "chicken" seitan

Ingredients

Bob's Red Mill vital wheat gluten, 1/2cup
Bob's Red Mill soy flour, 1/4cup + 2 tbsp (divided)
Poultry seasoning, 1 tsp
water, 1/2 cup
Organic Low Sodium Vegetable Broth, 3 cups
Natural Hickory Liquid Smoke, 1 tsp
Onion powder, 1 tsp
Sage, ground, 1 1/2tsp
Thyme, ground, .1/2tsp
Oregano, ground, 1/4tsp
Red Star, Nutritional Yeast, 1/4 cup
Directions
Mix wheat gluten, soy flour, & poultry seasoning in a mixing bowl until very well combined. Add in 1/2 cup water, and stir until it forms a ball. Spread remaining 2 tbsp soy flour on a surface to lightly coat (also, lightly coat your hands). Knead dough for about 1 minute, and flatten to about 1/2" thick. Cut into desired shape (strips, "nuggets", "breast", etc)- dough will double during the cooking process.
In a large pot, combine broth, liquid smoke, nutritional yeast, onion powder, sage, thyme, & oregano. Bring to a boil. Add seitan pieces, one at a time. Reduce heat, cover, and simmer for 40-50 minutes, or until most of the broth has evaporated. (stirring every 10 minutes) If making nuggets, watch closely, as they may take less time to cook.
Mkaes about 1 pound, with each serving being about 1/4 pound. Use as you would chicken.
