Mashed Candied Sweet Potatoes

Introduction

Simple potatoe dish is a great side. You may substitute a winter squash (i.e., butternut squash or acorn squash) instead of potatoes. Mixing them adds a nice flavor too. Number of Servings: 8

Ingredients

    Sweet Potatoes, 5 large
    Oranges, 2 large
    Maple Syrup, 1/4 cup
    Vegetable Margarine, 3 TBSP
    Ginger, ground, 1 tsp
    Allspice, 1 tsp
    Vanilla Extract, 1 tsp
    Salt, 1 dash

Directions

Place potatoes in large pot of boiling water. Let cook until tender. Remove to sink and under cold running water, peel off skin. Skin will come off easily. Place potatoes in large mixing bowl and mash well. Add remaining ingredients mixing completely. Pour into baking dish and bake in preheated oven at 350 degrees for about 15 minutes. Reduce heat to 300 for an additional 10 minutes. Remove from oven and serve.
