Carmen's Amazing Lentil Stew

Ingredients

    Lentils, 2 cup (remove)
    Chicken Broth, 8 cup (8 fl oz) (remove)
    Olive Oil, .5 cup (remove)
    Onions, raw, 4 cup, chopped (remove)
    Garlic, 6 cloves (remove)
    Pepper, red or cayenne, .5 tbsp (remove)
    Bulgur, dry, 1 cup (remove)
    Parsley, .5 cup (remove)
    Red Ripe Tomatoes, 4 cup, chopped or sliced (remove)
    Tomato Paste, 0.5 cup (remove)
    Rosemary, dried, 2 tsp (remove)
    Spinach, fresh, 4 cup (remove)
    Sour Cream, reduced fat, 12 tbsp (estimate)
    Salt and pepper to taste

Directions

rinse lentils, bring to boil in the broth or stock. reduce the heat and simmer. reduce heat and simmer, covered for 40 min.

meanwhile, heat the olive oil in a heavy soup pot. saute the onions until translucent. add the garlic, cayenne, and raw bulgar (bay leaves too if you've got em) and raw bulgur.

Stir the mixture on medium heat until the onions and bulgur are slightly browned

mix in the parsley and the tomatoes. when the tomatoes give their juice, gently stir in the tomatoe paste

combine wiht the lentils and their liquid.

simmer for 15 minutes

add the rosemary salt and pepper

just before serving, stir in fresh spinach. plop some light sour cream on top.
