Butternut Squash Soup

Ingredients

    Butternut Squash, Large (4 cups cubed)
    Olive Oil, 2 tbsp (remove)
    Onions, raw, 1 large (remove)
    Curry powder, 2 tsp (remove)
    *Cumin, dried, ground, 1 tsp (remove)
    *apple, fresh, large, 3 serving (remove)
    Vegetable Broth, 4 cup (remove)
    Ginger, ground, .1/8 tsp(remove)
    Peanut Butter, smooth style, .25 cup (remove)
    Milk, nonfat, 1 cup (remove)

Directions

aute Onion and cubed squash in oil.Add apples and spices and broth Simmer 20 min. until squash tender.
Let cool place in blender in batches. Puree
Return to soup pan , add milk and peanut butter,salt and pepper to taste and heat through.
Serves 10, approx. 1 cup per serving
