Introduction

Ilike these for breakfast. Ilike these for breakfast.
Number of Servings: 6

Ingredients

    1 c onion, chopped
    1 clove garlic, minced
    1 tsp olive oil
    Saute for 5 minutes - Add:

    1 medium baked potato, grated
    2 c grated summer squash
    1 c chopped red pepper
    2 large tomatoes (chopped)
    1 tsp Cumin
    Dash of red pepper flakes (to taste)
    Cook until veggies are tender.

    6 corn tortillas
    Bake until crispy

    12 tbsp refried beans
    Spread 2 tbsp refried beans on each tortilla
    Add 3/4 c veggies

    Top with salsa, if desired.
