Introduction

Ingredients

    3 cups of cubed Butternut squash
    1 large leek (white part only)
    1 medium to large onion
    1/2 tsp salt
    Pam

Directions

Spray large covered sautee pan (non-stick) with Pam. Sautee sliced leek & diced onion until starting to caramelize. Add salt & squash. Stir well, cover, & let cook on low flame stirring occasionally until squash is soft (about 1 hour).
