Garlic Spinach Onion Pasta

Introduction

Delicious, light pasta dish. Delicious, light pasta dish.
Number of Servings: 1

Ingredients

    Pasta of your choice - 2oz.
    1/4 to 1/2 medium onion, diced
    3 garlic cloves, sliced thinly
    handful of spinach
    1c chicken broth
    Reduced fat parm.

Directions

Cook onion until translucent.
Add garlic and spinach, cook until spinach is tender.
Add chicken broth, bring to boil and reduce heat.
Add salt, pepper and crushed red pepper to taste.
Cook 10-15 minutes or until sauce is slightly reduced.

Cook pasta according to package directions.

Toss pasta in sauce, add parm. cheese to taste and enjoy!

Makes 1 serving.
