Potato & Butternut Squash Latkes

Introduction

Latkes made with half potato and half butternut squash to add nutrients and vitamins to a great treat. Top with fat free Greek yogurt to serve. Latkes made with half potato and half butternut squash to add nutrients and vitamins to a great treat. Top with fat free Greek yogurt to serve.

Ingredients

    Potatoes (Baby red) -350 grams
    Butternut Squash - 350 grams
    Onion- yellow
    Eggs- 2
    Salt and Pepper to preference

Directions

Shred potatoes and butternut squash on largest side of grater; dice onions. Remove as much moisture as possible using towels or other methods. Combine potatoes, butternut squash, onions, 2 eggs, salt and pepper in large bowl. Place mixture into a strainer to allow excess moisture to drain throughout cooking process. Preheat large nonstick skillet to medium heat with cooking oil (I used sunflower oil, but vegetable would work just as well). Using a 1/4 cup measuring device, measure out latke servings and pan fry until golden brown, flipping over when the first side has browned. Makes 15x1/4 cup servings. Please note oil is not taken into account for nutritional info!
