Vegan Breakfast Cookies

Number of Servings: 24

Ingredients

    2/3 c mashed banana
    2 tbsp group flax
    1/4 c nondairy milk
    1/2 c canola oil
    1/2 c brown rice syrup
    1/4 c agave nectar
    1 tsp vanilla extract
    2 c whole wheat flour
    1 tsp ground cinnamon
    1/4 tsp nutmeg
    1 tsp baking soda
    1/2 tsp salt
    2 c quick cooking or rolled oats
    1 c walnuts (chopped)
    1 c dried cranberries

Directions

Makes 24 large cookies.

Preheat oven to 350 degrees. Mix banana, flax and milk until smooth. Add oil, brown rice syrup, agave and vanilla, mix. Sift in flour, cinnamon, nutmeg, baking soda and salt, batter will be moist. Fold in oats and cranberries.

Drop 1/4 c of dough 2 inches apart on a lined baking sheet, and bake for 14 to 16 minutes or until edges turn golden brown.
