Ingredients

    -2 large egg whites

-3 C mixed nuts (1 1/2 C raw spanish peanuts, 1 C lightly salted almonds and about 5 oz chopped walnuts)

    -3/4 t ground cinnamon
    -1/2 t ground allspice
-1/2 t 99% caffeine free cocoa powder (you can use regular cocoa powder, but I like Wonder Cocoa)
    -1/3 C granulated sugar

Directions

--In a large bowl whisk the egg whites until frothy. Add in the nuts (which make about 3 1/2 C). Mix/toss to coat. Sprinkle your seasonings and sugar over and mix/toss again.

--Line a large cookie sheet with foil and then spray lightly with cooking spray. Spread the nut mix evenly and bake at 250 degrees for 1 hour. STIR ONCE ABOUT HALF WAY THROUGH.

--Cool slightly before breaking apart if necessary. Cool completely before storing in an airtight container for up to 2 weeks.

--Makes 14 servings of 1/4 C each.

--Enjoy!!
