IntroductionA quick meal to put together thats low cal for two! Very filling and delicious. A quick meal to put together thats low cal for two! Very filling and delicious.
1 Boneless skinless chicken breast, cubed or shredded
1 can cream of broccoli soup
1 can Campbells cheese soup
2 cups cooked brown rice (measured after cooking)
1 clove chopped garlic
salt and pepper to taste
1/3 cup reduced fat shredded cheddar cheese
15 ounce package frozen broccoli
Spray pan with pam or other cooking spray, sautee chicken and garlic until chicken is done. Add broccoli and continue cooking until most of liquid has gone and broccoli is hot.
In separate bowl, combine rice and soup. Add salt and pepper. When chicken and broccoli are done, add them to bowl. Transfer mix to 9x9 casserole pan and top with shredded cheese, bake 15 minutes or until heated through.
This makes four servings, I am not sure how many cups each serving but its a fourth of the casserole. :)
