Chicken Tortilla Soup

Number of Servings: 8

Ingredients

    1 lb boneless, skinless chicken breasts
    8 cups water
    8 tsp sodium-free chicken bouillon
    2 cans reduced-sodium black beans, drained and rinsed
    1 lb tomatoes, seeded and chopped
    1 jalapeno pepper, finely diced
    2 c frozen corn
    1 can condensed cheddar cheese soup
    To Taste: dried minced onion, garlic powder, chili powder, cayenne powder, oregano, coriander, paprika, cumin powder

Directions

Combine everything in a crockpot and set on low for 6 to 8 hours. Before serving, shred chicken and return to soup.

Garnish with tortilla strips, sour cream, guacamole, whatever!
