Broccoli Cheese Potato Soup

Introduction

Creamy and delicious; a great soup for cold weather, and easy to vary. I used garlic chips, sea salt and cracked black pepper to get more bursts of flavor. You can also make this lower-sodium by subbing in low-sodium cheese (although it's hard to find low-fat cheese that is also low sodium, and I don't recommend fat-free cheese, because a little fat really satisfies; just cut the amount if you're wanting to cut calories and fat). Ingredients

    6 medium organic potatoes, with skins
    1 10-oz package frozen chopped broccoli
    1 7-oz package Kraft (or other) 2% Sharp Cheddar Cheese
    1-2 cups of Silk Plain Soymilk (can also use Light)
    1/2 cup chopped onion (will reduce in size by about 1/2)
    Sea salt, cracked black pepper, and lemon pepper to taste

Directions

This makes about 10 1-cup servings, I believe; didn't really measure.

Roast onions using non-stick spray in a 400 degree oven until golden and tender. Set aside to cool. Dice and boil potatoes (I use organic potatoes and leave the skins on for texture and nutrition) until tender. Drain and set aside. Steam broccoli and set aside. Mash potatoes and remaining ingredients, except for broccoli, onions, and cheese, with mixer. Stir these three ingredients in. Tastes best the next day; flavors have a chance to meld.
