Bean and TVP Chili

Introduction

Low in FAT (just 1.2 grams)... high in PROTEIN (17 grams)... and only 242 calories - the perfect chili - even for my husband who doesn't realize that this version is meatless! Ingredients

    2 cups Bob's Red Mill TVP, raw (you will need 2 cups boiling water for this as well)
    2 tbsp Ketchup
    1 tsp Macarico Piri Piri sauce
    1 large onion, chopped
    1 chopped red or green bell pepper
    3 sliced Jalapeno pepper - reserve some for topping
    2 cups Blue Menu no salt added Chicken Stock
    50 grams Splendido Sun Dried Tomatoes - chopped
    1 tsp Olive Oil
    2 tbsp Chili powder
    1 tsp ground Cumin
    1 tsp Oregano flakes
    1/2 tsp cayenne pepper
    3 cloves garlic, grated - or use roasted garlic if perferred
    2 cups of water
    7 cups Blue Menu Stewed Tomatoes
    1-1/2 cups Romano beans - dry
    1-1/2 cups Red Kidney beans - dry
    Chopped green onion (1 bunch)
    1 cup Fat Free Sour Cream


Directions

Soak beans overnight, then cook for an hour.

Pour 2 cups boiling water over 2 cups of TVP and add ketchup and piri piri sauce

Add oil to dutch oven, saute onions, peppers and garlic

Into the TVP, sprinkle seasonings and stir with fork. Add TVP to the onions and saute for a few minutes. Stir in Tomatoes and beans and 2 cups of hot chicken stock. Add chopped sundried tomatoes and stir.

Cover and simmer for at least 1 hour.

Top with 1 tbsp fat free sour cream, chopped green onions, and a few freshly sliced jalepeno peppers .... these are INCLUDED in the nutritional calculation
