Mini white chocolate raspberry cheesecakes

Introduction

Number of Servings: 12

Ingredients

    1 pkg. (250 g.) light cream cheese, softened
    1 cup cottage cheese (1%), pureed
    1/3 cup Splenda
    2 eggs
    2 oz. white chocolate chips, melted
    12 Gold Oreo cookies (vanilla)
    24 raspberries to top

Directions

Pre-heat oven to 350 degrees F.

Beat cream cheese, cottage cheese, Splenda and chocolate with mixer, add eggs one at a time. Place one cookie in the bottom of each of 12 muffin cups in a tray. Fill with batter.

Bake for 20 minutes or until centres are almost set. Refrigerate for 3 hours (or overnight). Top with raspberries.
