I modified a recipe i found in a Magazine years ago. I entered it into a Banana Recipe Contest and won a prize for it. I modified a recipe i found in a Magazine years ago. I entered it into a Banana Recipe Contest and won a prize for it.Number of Servings: 24
Ingredients

1 1/2 cups Sugar (or Splenda)
1/2 cup Butter flavored Crisco
4 Eggs
250 g coarsely chopped Walnuts (2 cups)
2 cups (about 6) over ripe Bananas (440 gr)
4 cups sifted Flour (may use self rising) (725 grams)
1 tbsp Baking Powder (omit or reduce if using self rising Flour)
1/2 tsp Baking Soda
Dash of Salt (omit if using self rising Flour)
130 g (drunken) Raisins (optional)
1 tsp Vanilla (optional)
1/8 tsp Almond Extract (optional)
Directions
Sift Flour, add Baking Powder, Baking Soda and Salt (if using) set aside.
Beat sugar (pr Splenda) and Shortening until creamy.
Add Eggs, mix until well combined.
mix in sifted dry ingredients
mix in overripe Bananas, mashed if necessary
Batter should pour easily, if not add another Banana or optional ingredients.
Spray 2 Loaf Pans with Baking Spray, Pour batter into pans
Bake in preheated 350 degree oven for 55 min or until Cake tester inserted into center comes out clean.
Makes 24 slices of bread.
