Introduction

Ingredients

    1/2 onion, 1 garlic clove, 1/2 small cabbage, 1/2 bunch of spinach, 2 large eggs, 1 oz mozzarella cheese, 1 cup brown rice

Directions

Start the rice in a small pot with lid. Cook until tender (about 40 minutes for quick cooking brown rice.)

Slice 1/2 onion and put 1 1/2 T. ghee in skillet to carmelize the onion. Add chopped garlic clove and chopped cabbage. Let it saute and carmelize for several minutes. Add chopped spinach and cook until it is wilted.

Add cooked brown rice and stir.
Pour over the mixture 2 eggs, scrambled. Put on a lid and let the egg cook briefly.
Add mozzarella cheese. It's best not to use too much or the dish does not taste of vegetables and is too overwhelmed by the cheese.
Continue to cook (with a lid )over low heat for a few minutes until the cheese is melted. Add pepper to taste or hot sauce. Other fresh herbs could be added, like oregano or thyme.
This dish makes approximately 3 1/2 to 4 cups, depending on the amount of vegetables you add. There are 4 1-cup servings.
