Polish Rye Bread

Ingredients

2 cups rye flour
2 cups white flour
2 tsp caraway seeds
2 tsp salt
1 packet active dry yeast
2/3 cup lukewarm milk
2/3 cup water
1tsp honey
Directions
bloom yeast in warm milk and honey set asside five minutes. Mix together flours, salt and carraway seeds. Add yeast mixture, mix well. Add enough water to make a soft dough. Place on a floured surface and need 10 minutes. place in geased bowl and cover. Set aside in warm place until doubled (3 hours) place again on floured surfcae and punch down. form in to oval place on parchement covered baking sheet, cover and set aside until doubled (1 hour to 1 1/2 hour) pre heat oven to 425. Slit top with sharp knife and bake for 30 - 35 minutes. Cool, slice and enjoy. Makes 12 1" slices
