Potato and Corn Chowder

Ingredients

    2 tbsp unsalted butter
    small onion, chopped
    1 stalk celery (or a few small), chopped
    two med-large carrots, peeled and chopped
    2 cups low sodium, fat free broth
    2 cups water
    2-3 red-skinned potatoes, diced
    3 cups frozen corn, thawed
    4 tbsp light sour cream
    parsley

Directions

Heat butter in large dutch oven. Cook onion, celery and carrots till soft. Add broth, water, and potatoes and cook for apprx 15 minutes. Add thawed corn, cook for 5 more minutes. Carefully blend almost all of the mixture using a blender or an immersion blender. Add 4 tbsp light sour cream (about 1/4 cup) and mix right before serving. Garnish with parsley. 1 serving=1 cup.
