Chewy Brownies (Gluten free, sugar free)

Introduction

Sweetened with Stevia and sweet potatoes, these brownies do not have any flour or sugar in them and they are moist and delicioius! Sweetened with Stevia and sweet potatoes, these brownies do not have any flour or sugar in them and they are moist and delicioius!
Number of Servings: 24

Ingredients

    1 Cup almond butter (or other nut butter)
    2 eggs
    1 cup sweet potato puree/mash
    1 tsp stevia or to taste
    1 tbsp vanilla extract
    1/2 cup cocoa powder or carob powder
    1/2 tsp sea salt
    1 tsp baking soda
    1/2 cup carob chips
    1/2 cup walnuts (optional - included in nutrition info)

Directions

1. In a large bowl, blend almond butter until smooth with a hand blender
2. Blend in eggs, then blend in sweet potato, stevia, and vanilla
3. Blend in cocoa, salt and baking soda, then fold in carob chips and nuts.
4. Grease a 9 x 13 glass baking dish
5. Pour batter into dish
6. Bake at 325 for 25-30 minutes
