Ingredients

    16 oz Peppered Smoked Salmon
    2 T Smart Balance Mayonaise

1 pkg Soft taco size tortillas (qty 8 shells)
    2 T Butter
    1 T Olive Oil
    1 t Italian mixed herbs
    1/2 t powdered Garlic
    1/2 t salt

Directions

serves 16 - 1 oz salmon & 4 wedges of tortilla

Wash hands thoroughly and put on gloves. Remove skin and any fat from salmon. In glass bowl, pull apart salmon - removing pin bones and shred with hands.
Mix in mayonaise until salmon forms a ball. Cover with plastic and refridgerate.

Place butter, olive oil, italian herb, garlic and salt in a small bowl. Place in Microwave and heat until butter is melted. Stir well.

heat non-stick skillet on medium high heat. Dip pastry brush in the butter mixture, stir well and brush one side of tortilla with mixture until lightly coated. Place in pan - should sizzle a little and cook until light brown. Flip tortilla and cook until golden. Transfer to cutting board. Repeat process until all tortillas are complete and stacked neatly. Cut tortillas in half lengthwise-then half again and half again (until you have 8 pieces like you would a pie. In the center of a large, round platter, place the bowl of chilled salmon and arrange the wedges of tortillas againest the bowl - going in a circular pattern around the middle. Don't overlap the tips as they will for the petals of the daisy. to serve: Place a dollop of the salmon mixture on large end of wedge and fold over. Remove fork and enjoy.
