Dr. Fuhrman's nutrient rich chocolate pudding

Introduction

just a warning - this is nothing like jello chocolate pudding. This is some serious nutrition, and while it does have a "chocolate-like" flavor, the texture is "different" - unless you have a higher powered blender than mine and can make it smoother. In my case, it was pretty obvious there were some veggies in there. My kids thought it was nasty, but all in all, I enjoyed it with some mixed berries on top and if you're looking to increase your veggie consumption, this should do it! I added a little more cocoa powder and maple syrup than the original recipe and also added some Vega chocolate smoothie powder to boost the protein. just a warning - this is nothing like jello chocolate pudding. Ingredients

    1/3 c lentils
    1/2 bunch kale
    1 small butternut squash, peeled and chopped
    1 small beet
    1/2 cup broccoli florets
    1 small zuchini chopped
    1 t no salt seasoning
    1/2 c raisins
    1/4 c chopped dates
    1/4 c raw cashews
    15 pitted dates
    4 T cocoa powder1 t vanilla extract
    1/3 c unsweetened almond milk
    2.5 ounces organic baby spinach
    2 T maple syrup
    4 T vega shake and go chocolate smoothie powder.

Directions

in a large pot, combine ingredients up to 1/4 c chopped dates with 4 cups water and simmer for 45 minutes until veggies are very tender.

With slotted spoon remove 2 cups of veggies and place in high powered blender and blend until very smooth. Add remaining ingredients and rest of veggies and blend to a smooth creamy consistency. Pour into custard cups and chill.
