The Inspiration - Yam and Chickpea salad

Number of Servings: 6

Ingredients

    2 small yams
    2 cups water
    1 c quinoa
    4 green onions chopped
    2 c chickpeas (
    1/4 c fresh basil
    6 T flax oil
    1/3 c cider vinegar
    sea salt and black pepper

Directions

Preheat oven to 425.

Roast yams for 45 min to 1 hr.. Cool, peel and cut into 1 " cubes.

Meanwhile, bring water to a boil. Dry roast quinoa and then rinse before adding to water. Reduce heat and simmer for 10 to 15 minutes.

In a bowl combine onions, chickpeas, basil, yams and qionoa.

In a jar with lid combine oil, vinegar, salt and pepper. Pour over mixture and toss to coat.
