Shannon's Quick Pickled Cucumber

Introduction

Great for a refreshing side dish or snack! Great for a refreshing side dish or snack!
Number of Servings: 8

Ingredients

    1 large seedless cucumber, skin on
    1/2 Cup Splenda for baking
    1 Cup Red Wine Vinegar
    1 Tablespoon Kosher salt

Directions

Thinly slice cucumber. Mix remaining ingredients and pour over cucumber slices. Cover container and let stand at least 30 minutes before serving.

These can be refrigerated for up to one day, but are best served shortly after prepared. Makes about 8 servings.
