IntroductionI ran across a Chocolate, Cranberry Oat Bar recipe, but since all my Christmas recipes thus far had chocolate and nuts, I decided to change it up a bit. What a nice change!! I ran across a Chocolate, Cranberry Oat Bar recipe, but since all my Christmas recipes thus far had chocolate and nuts, I decided to change it up a bit. What a nice change!!
-1C or 120g dried cranberries like Ocean Spray Cranberries
-87g or about 3 oz dried Apricots
-1/3 C 100% pure sqeezed orange juice like Minute Maid or Tropicana (I prefer not from concentrate)
-1 1/2 C or 6.75 oz all purpose white flour
-1 1/2 C quick cooking oats
-1 t baking powder
-1/4 t salt
-1 stick unsalted butter, softened to room temp. or warmed in the microwave for 10-15 seconds unwrapped
-1/2 C applesauce, unsweetened
-1 C light brown sugar, tightly packed
-2 large eggs
--Meanwhile in a large bowl, mix your flour, oats, baking powder and salt well. In another bowl, cream your sugar, applesauce and butter with an electric mixer on medium speed until light and fluffy. Add in eggs one at a time until well blended. Slowly add in your flour mixture, mixing well after each addition. Finally, stir in your cranberry/apricot mix.
--Spread your dough in a lightly sprayed 9 x 13 dish and bake in a PREHEATED oven at 350 for 20-22 min or until center is set. Cool completely before cutting.
--Makes 32 servings.
