Cedar Plank Tilapia With Tomato Caper Relish

Ingredients

    16 ounces tilapia fillets
    1 tablespoon chili powder
    1 teaspoon cumin
    1 teaspoon garlic
    1 cup tomato, finely diced
    2 tablespoons capers
    2 tablespoons basil, chopped

Directions

Preheat oven to 375F Put an 11x17 inch untreated cedar plan in the oven to heat. 2 Sprinkle the seasonings over one side of the fish. Place the fish, spice side up, on the plank. 3 Bake the fish for 15 minutes, or until it pulls apart. 4 To make the relish, in a bowl, combine the tomato, capers and basil. Mix well and season to taste with salt and pepper.
