Chicken Breasts in Caper SauceSubmitted by: DALENOFZIGER
5- Boneless, skinless Chicken Breast (approx. 15 oz after cooked)
2 Tbls. Olive oil
2 Tbls. White flour
2 c. Chicken broth (from poached chicken)
1/2 tsp. Salt
2 Tbls. Capers, drained and rinsed
1 tsp. Lemon juice or wedge of fresh juice or to taste
1 tsp. Onion powder
1/2 tsp. Garlic powder
1 tsp. Dried Dill weed
Take out of water, and allow to cool.
Cut up into bite size pieces.
In skillet heat Olive oil, and add flour. Cook till flour turns lite brown color, add chicken stock and remaining ingredients. Stir till it starts to thicken and add back in cut chicken pieces, stir to coat pieces.
Makes (5) 2/3 c. servings
Serve hot over 1/2 c of cooked rice (serving size)
