Chicken Stew

Ingredients

    1 tbsp canola oil
    2 chicken breasts, boneless and skinless, cubed
    2 onions, chopped
    Pepper, to taste
    2 cups water
    2 cans (284 ml each) cream of chicken soup, low fat
    2 cups carrots, sliced

Directions

Heat oil in large pot. Add chicken, onion and pepper. Cook until chicken is no longer pink and onions are soft and start to brown.
Add water and canned soup. Stir to mix. Add carrots. Bring to a boil. Cover and simmer on medium-low about 20 minutes or until carrots are soft.
Serves 6.
